In Italy, enjoying moka pot coffee is a cherished morning tradition in many households. Moka coffee is easy and quick to prepare on the stovetop with the right equipment and coffee.

Through a six-year study by its Research and Development department in conjunction with the University of Coffee and Bialetti, the inventor of the iconic Moka Express pot, the moka experience has been transformed to achieve the optimal aromatic flavor.  illy discovered that the best aromas are created before the moka pot begins its trademark gurgling sound, and that the ‘tail end’ is actually best eliminated because it is overextraced.  By studying this process, illy created a courser grind of coffee perfected for moka preparation to enhance the enjoyment of the moka tradition.
